Mission eggplant...
I have been discussing gardening with papa Carr for the last couple of weeks because he is giving me a small plot to plant things in. I had mentioned that I wanted to plant an eggplant because they're "pretty". Well he brought one home and told me I needed to do something with it, so I tried to find some creative use for this funky plant. I decided on curry but I really couldn't find a good recipe so I just made one up. I walked to the new Bollywood market to get some supplies and took my camera along with me (of course.)
Along the way I stopped at my favorite park and took some pictures of a double helix ladder I have had my eye on for some time...
I couldn't resist.....
I really like this new little market, I got some curry spices and some Indian desert.
I headed home and started to process of my first curry....
The eggplant is weird, it's all spongy and soaks up everything you put with it. I tried to saute it in some olive oil but it was futile because it just soaked up all the oil! So I "browned " it?
I also saute'd some onions and garlic to add later. Along with tomatoes (from last years garden om nom nom) and potato I combined everything and added a ton of curry spices along with coconut milk.
I let it simmer for about an hour while I made some brown rice. Papa Carr was impressed and I think he will be cool with me growing an eggplant as long as I use it, not just for aesthetic reasons.

ReplyDeleteyummy! i'm sure there are a ton of things you can do with eggplant.... i'd think it's one of those versatile foods. kudos to you for making up your own recipe!
