I smell apricots

SO after work today I headed over to a friends house in American Fork, her family has a huge apricot tree in the back yard and they never use the fruit! I took it upon myself to pick a whole box full of these giant peach size apricots. I had one of those office boxes, you know the one with the handles and sharpie scribbled "finance records 2001-2002" on the side, worked beautifully. The best part is they don't spray and they aren't wormy. This is the second friend I have encountered that does not use their fruit trees! I am baffled as to why not? I wish we had that tree! Anyway I came home with this massive box after giving some to Andrew and we still had a crap load, I am making a really yummy apricot crisp right now. I of course, messed with the ingredients and it's magnificent. I usually don't measure but i will do my best, here is the recipe:

FILLING
5 cups of Apricots or peaches whatev
4 tablespoons of sugar
1 Tbsp of almond extract
2 tbsp of vanilla
pinch of ginger
1 tbsp of cinnamon

mix all of this in the pan and let set

Crumble topping:

1/2 cup butter
1/4 cup brown sugar
1/4 cup flour
1/2 cup unsweetened coconut * I prefer the clean organic stuff*
1/2 cup rolled oats

mush till it forms crumbs and sprinkle over top of fruit and bake at 375

om nom nom nom.

I would have taken pictures but I left my camera with linds, I was taking pics of her sister Cassie and her magically rounded prego belly.

The guy who drives the ice cream truck down our street is CREEPY! who gave him that job? whatever happened to wearing a white shirt and tie, and those hats you can make out of paper? His hands better be clean!

  1. yes i never understood the reasoning behind having wonderful produce trees/plants and not using them... our neighbors, who we got our strawberries from, don't pick their strawberries! and these strawberries are fantastic tasting and produce beautifully! i have like 5 freezer bags full, have made 3 jars of jam so far, made strawberry shortcake with them,and plan on making a pie next week. all this beautful produce and so much to make with it... they also have apples to boot. i feel weird asking "hey, since you aren't picking your produce, can we pick it and use it?" i just don't think i could ask to take their stuff...
